Got home and watched the DVR. Found kohlrabi (my new obsession) at a farmers market in Portland, so today I made the apple & kohlrabi slaw that I am in love with. Sooooooooo good.
If you haven't had kohlrabi, it's a veggie that's related to cabbage, but tastes a bit like broccoli. I am fascinated by this vegetable that is bred. Here is the yummy recipe I found:
- One bulb of kohlrabi
- One Granny Smith apple
- 2 teaspoons brown mustard
- 1.5 tablespoons apple cider vinegar
- 3 tablespoons olive oil
- 1 tablespoon fresh dill
- 1 teaspoon honey
- Salt
- Pepper
PREP / ASSEMBLY:
Cut the kohlrabi into matchsticks. Quarter and core the apple. You can peel it if you want, but I didn't want to. You can cut the apple any way you want, really - I went with a very rough julienne and didn't care when some of them turned into chunks.
Then just whisk together the dressing in a medium prep bowl, adjust the seasonings to your taste, and toss the apple and kohlrabi until it's thoroughly coated in the dressing.
Started feeling pretty drowsy, so I went ahead and took a nap mid-afternoon. Didn't want to get out of bed when I woke up, so I didn't. In fact, I didn't get out of bed until right before I had to teach voice lessons. One more lesson to teach tonight and then heading to bed.
